HOLIDAY LEMON YOGURT CAKE
Now that Halloween is officially over, gone are the ghost themed cupcakes and here are the Christmas themed cakes! I’m one of those people that cannot wait to move onto the next holiday, so let the Christmas planning begin. When you’re planning your next Christmas party, be sure you include the appropriate desserts and I’m here to help with that. Thanks to siggi’s yogurt I’ve planned a delicious dessert everyone will enjoy!
siggi’s yogurt was made for the very first time in 2005 by Siggi Hilmarson, who craved skyr, a thick, creamy high-protein yogurt from his native Iceland. All siggi’s yogurt sold in Canada is made with 100% Canadian milk, which is something I always look out for. Thanks to siggi’s amazing tasting yogurt I decided to make a delicious Lemon Yogurt Cake perfect for the holiday season or any occasion.
My favourite part of making holiday recipes is enlisting help from my family or, in this case, my little ones. Anytime I’m baking Mason and Asher love to help.
First off let me share the recipe with you. It’s super easy and well worth it I promise:
HOLIDAY LEMON YOGURT CAKE
Ingredients:
1 cup siggi’s yogurt
6 eggs
½ lb Butter
1 whole Lemon rind
2 tbsp Lemon Juice
3 cups Flour
½ tsp Cream of tartar
2 cups white Sugar
1 tsp Baking soda
½ tsp Salt
Directions:
Set the over at 350 degrees
1) Separate six egg whites (keep yolk) then add ½ tsp cream of tartar. Whip to soft peaks.
2) Add ½ cup sugar then whip and set aside
3) Whip butter then slowly add 1½ cups of sugar and beat well.
4) Add each egg yolk and beat then add lemon rind and 2 tbsp lemon juice
5) Sift 3 cups flour, 1 tsp baking soda and ½ tsp salt
6) Mix butter portion and flour portion with 1 cup of yogurt in stages.
7) Beat egg white again and add until it disappears.
8) Add to greased pan and bake for 45 minutes
