Literally Mashed Sweet Potato Casserole

Sweet Potato… I mean I have to be honest I can’t get enough of it, and is something we eat regularly in this household!

There are so many ways to make it and when I was given this casserole recipe I know this would be my all time fav! Not only do we make it here for dinner but its becoming a habit that every holiday I am getting asked to bring it–its such a hit I think they would rather the casserole then me if they HAD to choose!

So I am going to share this recipe with you, and you can thank me later. I describe is as mashed sweet potato with the topping that tastes like a heavenly maple tart 🙂

Literally Mashed Sweet Potato Casserole

What you need:

4-6 Large Sweet Potatoes Peeled

1/2 cup + 1 tbsp sugar

1/2 tsp salt

2 eggs

1/2 cup milk

4 tbsp melted butter

1 tsp vanilla

TOPPING:

1/2 cup brown sugar

1/2 cup all purpose flour

3/4 cup (or one cup depending on your liking) of chopped pecans

How to make: 

1.) Peel jackets off the sweet potatoes 2.) Boil the sweet potatoes until really tender and mash 3.) Stir in sugar and salt. 4.) In a separate bowl whisk together eggs, milk, vanilla and 4 tbsp butter. 5.) Stir into mashed sweet potato mix until full blended and smooth. 5.) Butter a 2 qt baking dish and add mashed sweet potato into it while smoothing the top. 6.) Combine topping ingredients and add them on top of the sweet potato in the baking dish. 7.) Preheat oven to 350. 8.) Bake for 40 mins… if you see it bubbling at the 40 minute mark that is okay!

I always personally add in 1 cup of chopped pecans so its not more sugar in the topping then pecans, but do what I do…taste it. Who doesn’t need a sweet taste in their mouth while making this mouth watering dish!
